Sauce:
Combine sauce ingredients. Pour over chicken, halved or in pieces. Leave at room temperature for 1 hour. Place chicken on rack in smoker. Coat with sauce. Close lid and cook for 30 minutes. Open and baste with additional sauce. Close lid and cook for 30 minutes. Baste again, then leave chicken on rack from smoker, and put on a tray under the broiler to brown and crisp. Serve at once. Sauce can be used with turkey or pork too.
