Good Stock for Soups

A good stock is so easy to make and handy to have, as it enriches all recipes.

  • Leftover chicken, turkey, or meat bones
  • 2 quartered onions
  • 2 celery sticks
  • 2 carrot sticks
  • Garlic cloves
  • Fresh ginger root or ground ginger (to give it some spice)
  • Peppercorn, whole or ground
  • Salt to taste
  • Parsley, fresh or dried

Use your leftover chicken, turkey, or meat bones, and let them simmer in enough water to cover for about 3 hours. Add onions, celery, carrot, garlic, ginger, peppercorn, salt, and parsley. Remove from heat and let cool before straining through a sieve. Either keep in the refrigerator of freeze until you need to use. To store in different sizes, use ice cube trays, small or large plastic bags, or plastic containers.
