Portobellos with Feta Cheese for Grilling or Baking Plank

  • 4 portobello mushrooms
  • salt and pepper to taste
  • Juice of half a lemon
  • 16 thin slices of feta cheese
  • 4 tablespoons melted butter

Place the mushrooms stalk side up on the heated plank. Mix melted butter and lemon juice together and pour a little over each mushroom. Place 4 slices of feta cheese on the top of each mushroom to cover. Put Plank back onto the barbecue and close lid (or in oven at 375 degrees). Leave at a medium heat for 15 minutes.

Serve at once.
