Salmon

  • 1 pound salmon fillet
  • Lemon
  • Pepper
  • Dill
  • 1 tablespoon Alder or Oak Wood Chips (if you like it with more flavor, make it 1 1/2 tablespoons)

Place salmon skin side down on rack. Squeeze fresh lemon over fish. Add a pinch of pepper and a dash of dill to taste. Smoke 17-20. Turn burner off and let stand covered for 5 minutes.
