Smoked Tomato Sauce #2

  • 3 tablespoons olive oil
  • 1 clove garlic, crushed
  • 1 large onion, finely chopped
  • 1 tablespoon sugar
  • Green pepper, finely chopped
  • 1 carrot, finely chopped
  • 8 tomatoes halved and smoked with 1 1/2 tablespoons alder or maple wood chips for 10 minutes
  • 1 bay leaf
  • 4 stalks celery, finely chopped
  • 1/2 teaspoon thyme, salt, and freshly ground black pepper

Heat oil in a large saucepan, add garlic, onion, sugar, green pepper, and carrot. Cook over a medium heat, stirring constantly until the onion begins to brown. Add smoked tomatoes (see our recipe for Smoky Tomatoes!), bay leaf, celery, thyme, salt, and pepper. Cook on low for about 40 minutes until the mixture thickens. Purée in a blender and serve over spaghetti.
